Making a 'killer' omlete!!;

Breakfast happens to be my favorite meal of the day! And on Week-ends rarely before 10:00 AM! Something sweet at breakfast time for me is almost a 'must', and along with that a lovingly created Cal-Lahori Omlete (as my omlete has a little bit of Lahore and a lot of California in it!), with a sesame bagel or on rare occassions a Lahori Paratha (a buttered flat bread).

Recipe: to feed two hungry and hearty eaters!

Ingredients:

5 eggs fluffly beaten
1/2 cup mixture of chopped red, green and yellow bell peppers
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
1/2 bunch chopped green onions
1 chopped serano chili
1 medium sized tomato seeded and chopped
2 tablespoons chopped (brown) onion
Salt to taste
2 cloves chopped or pureed garlic
3 tablespoons Olive Oil or as desired!!


Directions:
(You can cook all five eggs into a big omlete together, or in batches into two seperate omletes, if making two seperate omletes just divide the ingredients for two)

Heat oil in a large frying pan, add the chopped garlic, let slightly sizzle for a few seconds and add the prepped vegetables and herbs. Let the mixture cook for about 30-45 seconds and add the beaten eggs with the salt added to them. Gently fold the herb and vegetable mixture into eggs as they cook together in the pan. Continue cooking on medium to low flame, occassionaly lifting a side of the cooking egg to allow for any liquid egg batter on the top to spread out in the pan for even cooking. Turn over with a large spatula, the larger omlete may break into portions-allow for cooking on the other side. As soon both sides have cooked through to a nice light golden hue, Serve with a bread of your choice.
